Sapere la Terra. On the relationality and geographicity of eating

Sapere la terra has the aim of reconstructing the philosophical origins and the aesthetic and ecological consequences of gastronomic localism and its strategies. By Gastronomic Localism, I mean the increasing importance of spatial determination in the qualitative characterization of food.

After this, I tried to outline a concrete strategy to rethink localism itself by focusing on, and starting from, the specific conceptualization of space that emerges from the aesthetic practices connected to the production of food itself. To do this, I’ve been drawing on the aesthetic and ecological aspects that proved to be essential to the care, protection and recognition of the relational systems from which food concretely emerges. I did this also by carrying out three fieldworks in three sites of agricultural production, engaging with spaces of production through situated practices.
